Menu Plan Monday

I just last week started making a menu plan for the week. I just couldn't stand waiting til 4pm every night to try to figure out what to make to eat. So now I plan it all out and get all the ingredients ahead of time. So now after CJ's nap, I get right to cooking.

Well here's what I have planned for this week.

Monday - Sun-dried tomato penne
Tuesday - Sloppy Joes
Wendesday - Tex Mex Crock Pot Chicken
Thursday - Leftover Chicken + Rice
Friday - Paula Deen's Egg, Avocado, Bacon, and Cheese Sandwich

Anything that has cheese in it, we just do the cheese on the side so that CJ can have it. If it calls for milk, we use soy milk.

Craig is off on the weekends, so he either cooks or we go out or we go to his mom's for dinner. So we plan that then. I'm just starting to learn to cook proper meals, so I'm excited. :) Pin It

  1. Seeing your menu makes me think it might be fun to create a reading menu with my kids. It'd be a good opportunity to go through the shelves and pick out some to savour.

  2. I really need to do this. I hate, hate, HATE to cook, but now that Rich is teaching or tutoring every weeknight, I've got to get out of the fast food habit. I'm going to start this tomorrow (or maybe next week, as I'm in bed sick right now.)

  3. I'm still working on learning to cook proper meals, too! That pasta recipe looks really great, and more importantly, easy!

  4. We're back to just 2 of us with all the kids grown up. Our old RV had tiny kitchen, so we didn't cook much. The new one is fab, with a decent-sized fridge & apartment-size oven. So it's time to start menu-planning again.

Thanks for reminding that it doesn't have to be long or detailed to be a good way to make sure there's indeed a dinner to put on our new table!
